to make the crêpes: 7 eggs, 200 flour, 1 liter milk; to make the custard: 1 liter milk, 80 g flour, 70 g starch for pastries, 2 egg yolks, 300 g sugar, 1 lemon rind, cinnamon powder; 300 g berries (fresh would be better), vanilla ice-cream
To make the crêpes: Beat the eggs with the flour, add the milk and whisk to prevent lumps forming. Use a medium size non-stick frying pan. Place on the heat and fry the mixture one ladleful at a time (cook on both sides). To make the custard: Boil the milk with the sugar, the lemon rind and the cinnamon. In a bowl mix together the flour, the starch and a little milk. As soon as the milk in the casserole starts to boil, add the mixture. When the custard has condensed, mix in the berries and stuff the crêpes. Garnish with a scoopful of ice-cream and berries.
