31. Kiwi sorbet
1 liter water, 300 g sugar, 250 g kiwi purée (or other fruit), 1 egg white
Boil the water with 250 g of sugar. Let it cool. Mix the egg white with the remaining sugar and the kiwi purée. Add to the boiled water. Put the sorbet in the ice-cream machine. When ready, garnish with slices of kiwi.
