23. Wrapped pork chops (photo 12)
4 pork chops with the bone, 4 slices of ham, 4 slices of cheese, flour, 2 eggs, bread sticks (Torino type), parsley, salt and pepper
Beat the meat to make it more tender. Place a slice of ham and one of cheese on each chop. Double the chops. Break the bread sticks into crumbs. Add parsley, salt and pepper to taste. Dip the chops in the flour, then into the eggs and in the crumbs. Melt the butter in a pan and fry the chops over a moderate heat until the meat is done and the breading is crunchy.
