1. Orange an onion salad

4 oranges (tarocco type), 2 red onions, olive oil, salt, pepper

Cut the onions in thin slices, sprinkle some salt on them and let stand for 1 hour. Wash and drain them (the onion will be sweeter and more palatable). Peel the oranges. Chop each segment into medium-size cubes. Mix in with the onions and season with olive oil, salt and pepper.
